I've no idea what to cook - I loose all my enthusiasm for cooking on the 7 days my dh is away and it's just me and the kids - I was going to make chilli con carne but it's so hot. I need some new ideas..

Julz, I mashed a whole bunch of recipes together but it was something like this:

Marinate the chicken overnight (must be overnight for the chicken to be deliciously tender, I marinated it 3 hrs one other time and it was not enough). For flavour, I added one clove of minced garlic, 1/4 grated onion, paprika, 1/2 tsp crushed celery seeds (or else some chopped celery would also work I think, it is just for flavour) the buttermilk. That's enough for 5-7 pieces of chicken (I used a combination of drumsticks and thigh fillet pieces)

Make the crumb mixture by combining 2 cups crushed cornflakes (or panko, I used a mix of both as I didn't have enough panko), salt, pepper, 3-4 tbsp finely grated Parmesan cheese, a small handful of thyme leaves (I used fresh but you could use dried).

Take the chicken out of the marinade, let the excess drip off. Then press the chicken piece into the crumbs and cover the entire piece in crumbs. Place on a lined oven tray on top of a wire rack (the pieces will definitely stick to the rack and I haven't worked out whether I can just put it onto a paper lined tray), bake at 180 degrees c (160 fan forced) for 40 mins.

Chicken thighs, tomato, mushroom and capsi sauce and pasta. We haven't had a tomato based pasta in forever.

We had roast pork and roast vegies last night.

Plenty of leftover meat for 2 more meals. Fried rice for lunch, and roast pork ramen noodle soup for dinner tonight.

I'm cooking the SAHM creamy salsa chicken but I didn't have any salsa or taco seasoning so I've made my own. Hopefully it tastes nice!

I made lasagne tonight. It was so good and both kids scoffed the lot!!!
My other exciting meal was lunch - creamy Parmesan polenta with roasted veg. D-ivine!

We were meant to have lasagne, but hubby made the last minute decision to take us motorbike riding so it was a late tea, so we just had toasted sangas.

I had fettucine with garlic and chilli prawns at my SIL's. Was delicious.

I was supposed to have steak and salad and chips with DH and the kids at home but we had no running water today so had to bundle the kids and myself to my SIL's for dinner.
