I just take a bit of the liquid out (like half a cup) and dissolve some cornflour into it and then chuck it back in. Thickens up well.

I do the same as arjay but occasionally use gravy powder, especially if it's red meat.

I have added pasta to help absorb some of the liquid - it depends on the inital recipe as to whether it suits to have pasta with it!
