Using green part of leek

I'm cooking leek and cauli soup and only using the white part of the leek....although I do not know why!

So what can I use the green part for? A quiche perhaps?

I don't use the green part, I find it a bit tough. I do, however, use it when making stock

I slice about half way up - so into the green but before it starts feeling too woody.

The green bit is ferral, just think of it like the carrot tops lol.
