Oh it's SO easy, you can't fail - trust me, people will be singing your praises!! :D I always go a bit overboard with the Baileys - make it the day before for best results.. yaarrrrmmm.

I'd love to make this too but dont drink so have no Baileys in the house...not liking the sound of milk, choc, coffee either so I guess I will drool over this one until I find something to replace the Baileys

I wonder if one of those Jarrah flavoured coffee/choc type things might work? Bit more liquidy than Baileys, but the taste would be similar but w/o alcohol.

So the custard, it will be runny custard won't it? Just thinking, if it's a layered effect might want something a little more solid??

Nope S, the custard works - just make sure you use the full fat stuff :)

Hahaha soo glad you liked it - my friend (whose Mum is actually a chef, and her parents before her) is the one who made it up - was about ten years ago and I haven't looked back!! ;)

I made it for the work BBQ on Saturday and it was a hit - everyone raved about it. I thought it was good, but next time I will make a few changes. The mudcake I bought was quite small so I will use two next time - I prefer trifle to be more cakey than custardy. I also thought it would be nice with some crushed nuts (walnuts?) sprinkled through it.

I might have to test this out this weekend to make sure it tastes good before I make it for Christmas ;-)

How much Baileys do you use roughly? Just wondering whether i've got enough or if I need to buy more.
