These are so incredibly delish! I could eat them all day :lol:

Enchiladas

1 tablespoon olive oil
1 brown onion, finely chopped
500g beef mince
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon chilli powder
400g can diced tomatoes
1 capsicum, chopped
2 tablespoons tomato paste
1 beef stock cube, crumbled
8 tortillas
3/4 cup grated mozzarella cheese
sour cream and avocado, to serve

Preheat oven to 200°C. Heat oil in a large frying pan over medium-high heat. Add onion. Cook until onion is tender. Add mince. Cook, stirring, until browned.
Add cumin, paprika and chilli powder. Add tomatoes, capsicum, tomato paste and stock cube. Reduce heat to medium-low. Simmer, uncovered, for 10 minutes.
Warm tortillas following directions on packet. Divide beef mixture between tortillas. Spread along centre of tortillas and roll up to enclose filling. Place in a large, greased baking dish. Sprinkle with cheese.
Bake for 10 minutes or until cheese melts and burritos start to brown. Serve with sour cream and avocado.

Making Mince, Lentil and Spinach Curry, but again, varied it a bit :lol:

*using baby spinach instead of frozen spinach
*added heaped tb korma curry paste in addition to the spices
*added frozen green beans
*used organic tinned brown lentils (instead of red lentils & yellow peas)
*didn't have leek, so used diced red onion

Didn't have any canned chickpeas, otherwise would have added them too.

man oh man it smells divine!!!!!!!!!!!!!!!!!!! :hhhappy: the house smells currylicious!! :lol: :lol:

Roxy, I can smell it now!

I don't use frozen spinach either, just fresh baby spinach. Green beans is a good idea.

I bought the Woman's Day 'Marvellous Mince & More' recipe book and made this last night. It was yummy, but not very spicy so you could more spice to give it a kick.

Spicy Beef Pilaf
2 tsp oil
500g beef mince
1 large onion,thinly sliced
1/2 tsp ground cumin
1/2 tsp paprika
1/2 tsp turmeric
1 1/2 cups basmati rice
3 cups chicken stock
1 cup frozen peas, thawed
2 tomatoes, finely chopped
1/2 cup currants
1/2 cup chopped parsley
natural yoghurt to serve

1. Heat oil in a large saucepan on high. Brown mince for 4-5 minutes, breaking up lumps with the back of a spoon as it cooks. Transfer to a plate. Cover to keep warm.
2. Saute onion in same pan for 5-6 minutes until golden. Stir in spices and cook, stirring for 1 minute until fragrant.
3. Blend in rice and stock. Bring to boil on high, stirring. Reduce heat to low and simmer, covered, for 12-15 minutes until stock is absorbed.
4. Fluff pilaf with a fork and stir through mince, peas, tomatoes, currants and parsley. Replace lid and stand for 5 minutes. Serve with yoghurt.

I've made that! So good! Some of our dinners are getting a bit bland I think (or I'm a bit tired of them) so I love anything that has some different flavours.
